Ingredients

• Your preferred poached fruit (quince, peaches, pear)
• 2 slices day old bread
• 2 eggs
• Dollop butter
• Organic yoghurt
• Australian honey

Method

Lightly beat two eggs in a shallow bowl. Dip the bread in the eggs and fry in a non-stick pan with butter.
Place poached fruit on top and drizzle with poaching juice. Finally, drizzle with honey and top with organic yoghurt.
